Hey guys, its Emily here with a recipe for you today!
We had great success with our Cauliflower Pizza Crust recipe, and many people seemed to love it, so we are going to continue the trend and bring another Paleo pizza recipe to you guys! This one starts with delicious portabella mushrooms. Follow along to get the recipe!!
Paleo Portabella Pizzas
First, make sure you will have everything you need:
- 2 large portabella mushrooms, cleaned and de-stemmed
- olive oil for brushing mushrooms
- 1 6-ounce can organic tomato paste
- 1 16-ounce can organic tomato sauce
- 2 T Penzey’s Pizza Seasoning or similar spices
- 1 cooked, shredded chicken breast or other meat of your choice
- onions and olives or other veggies of your choice
- Organic, raw cheese
- Arugula or other salad green for serving
To begin, preheat oven to 350°. Start with clean, de-stemmed portabella mushrooms. Lightly brush with olive oil and sprinkle with a bit of salt. Place top-down on a baking sheet lined with parchment paper.
In a small saucepan, combine your tomato sauce and tomato paste. We always choose organic! Add Penzey’s Pizza Seasoning or a similar combination of spices. Stir. Heat until warm and bubbling. You won’t need to use all the sauce for the pizzas, so save some for later!
Spread a thin or thick layer (depending on your preference) of sauce inside the mushrooms.
Add shredded chicken to the mushrooms, on top of your sauce layer. We used boiled chicken breast. Quick and easy! Add just a bit more sauce on top of the chicken to help hold everything together.
At this point I added some diced onion on top of the chicken. Feel free to add any veggie toppings you like! It helps to cook the veggies first before adding to the pizza so they don’t release too much liquid into your mushrooms. I prefer to add these veggies before the cheese because the cheese helps hold everything together.
After the onions I added a layer of organic, raw cheese that I shredded. We prefer raw dairy only for the enormous health benefits (even though it’s not technically paleo). If you want 100% Paleo, omit the cheese :(. After the cheese, I sprinkled a little more of Penzey’s Pizza Seasoning on top, and added black olives to one of them. Mr. Moon prefers his pizza without them. 😉
After adding toppings of your choice, you’re ready to bake! Place in a preheated oven at 350° for about 15 minutes. You can also broil for a minute or two at the end to brown the cheese a bit! Serve with salad on the side, or in this case fresh arugula. We hope you guys enjoy this delicious meal!
